You have to think about the whole team and not a single hunter. That said, the awakened captain is a real tanker, but you'll need to max him out. -

I've heard from a few other people that Crocus and Dumble make a good team because they both do damage based on the opponents attack.

That's for stages. They can get you through most of them quite easily. On the more difficult stages you'll need luck with their damage skills actually working. So if you're doing the harder ones expect to retry them several times.
As for def teams. Gerard and junia can be good with captain -
Captain is good if u only AWAKENED him. His overall great on both PvE and PvP because of his stackable 4th and self healing properties. If you planning on putting stall team on defense, better plan on your skill synergy and focus upgrading all five hunters with decent equipments, jewels, and level skills. Though, Awakened Gerald outperform Captain in terms of defending and I recommend him.
