Throughout this entire game I've been avoiding the jewel feature of this game. However, its about time i start figuring out how to use it. Ive been collecting the jewels but I don't know which jewels go best with my hunters. I figure it's best to start with my hunter Lawrence. Any tips would be nice to know.

I use all defense for my Lawrence and make sure there is a ER substat so she's harder for ice elements to kill. -

If you could able to reach 20% Block Chance on 6xBlk Jewels, you'll be able to achieve 90% Block Chance.
40% (Base) + 30% (5th) + 20% (Jewels) = 90% Block Chance
Block Chance will utilize Damage Reduction Block better. It means you'll get better Defense than Defense you got from Defense point stat and Element Resistance. However, those are much recommended and present on all Jewels substats.
There are lots of Healer combos to enhance Defensive stance for Lawrence.

What makes her really tanky is her stun immunity and defense down immunity, therefore choose Defense, Block, or mix it with both. Damage Reduction Block is also good for her but it decreases so better go the other two jewels.
She can also deal massive damage (can do double damage if her 4th activate) and removes buff plus stun which makes her deadly. So full attack jewels or mixed with speed plus attack because of her 4th if going offensive. Going offense tank means she is already a tough tank or that she is paired with a strong healer.
Any substat will do depending if she goes offensive or defensive. If offensive, element enhance substat for diamond but if defensive go for hp or element resistance.
